Vegan Recipe: Wholesome Oat Snackles

Makes 12 snackles. The serving size is 2 snackles, so enjoy throughout the week as a breakfast or snack. These little treats are more like mini muffins than cookies — they’re perfect for packing in lunches or to curb midmorning cravings.

GET READY

Preheat the oven to 180°C. Line baking sheets with parchment paper.

MAKE BATTER

In a bowl, combine oats, oat flour, raisins, hemp seeds (if using), baking powder, cinnamon, zest (if using), salt, and nutmeg. Stir until well combined. Add applesauce, maple syrup, and chocolate chips (if using). Stir until well incorporated.

BAKE SNACKLES

For each snackle, use a cookie scoop (or a spoon) to transfer 1 to 1 ½ tablespoons of dough onto prepared baking sheets. Bake snackles until golden brown, 14 to 15 minutes. Remove from heat, let cool on baking sheets for a minute, then transfer to a wire rack to let cool completely.

Store any leftover snackles in an airtight container in the refrigerator for up to 5 days.

1 cup rolled oats

1 cup oat flour (you can make your own; see tip)

1⁄3 cup raisins

1⁄4 cup hemp seeds (optional)

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon lemon zest (optional)

1⁄4 teaspoon sea salt

1 dash ground nutmeg

1⁄2 cup unsweetened applesauce

1⁄4 cup pure maple syrup

2 tablespoons dairy-free chocolate chips (optional)

RECIPE TIPS

Oat Flour: Make your own oat flour by placing oats in the bowl of your food processor and pulsing the oats until they are ground into a powder-like consistency. 1¼ cups of oats make 1 cup oat flour. Pure Maple Syrup: Maple syrup is boiled down sap from the maple tree. Make sure to purchase “pure maple syrup” (not “pancake syrup,” “table syrup,” or “maple-flavoured syrup,” or even just “maple syrup,” as they contain artificial maple flavour and cane sugar or corn syrup).
