Vegan Recipe: CORN PROVINCIAL PIE
I made this recipe inspired by the original from @tnmvegg, Maria, Flávia, thanks girls.
They preferred white flour, I had rice flour instead. Also, I preferred rice milk instead of water to make the batter. Oh, the fillings I had made my own as well. :)

Ingredients
Filling
1 tbsp vegetable oil
1 onion chopped
1 garlic clove shredded
200g corn
Salt, paprika, pepper, other seasonings to taste (I had chimichurri and turmeric)
1 tomato chopped
1 cup of olives chopped
Batter
1 1/2 cup rice milk
1/4 cup vegetable oil
200g corn
1/2 onion
1 garlic clove
Salt
1 1/2 cup rice flour
1 tsp baking powder
METHOD
- Preheat the oven to 180º.
- In a saucepan add the oil and onion and sauté until transparent.
- Add the corn and sauté for 2 minutes.
- Add the salt and seasonings and sauté for 2 minutes.
5. Add the tomato and olives, sauté all together for more 2 minutes, and reserve.
6. Add to a blender all the batter ingredients (except the baking powder) and mix well until smooth.
7. Turn the blender off and gently add the baking powder (manually).
8. Grease a rectangular plate and add half of the batter.
9. Add the filling (reserved).
10. Cover with the rest of the batter.
11. Put it into the oven for approximately 45 minutes, or until you check that it´s cooked.
You can serve hot or cold, both are amazing.
If you choose to eat cold, let it cool down completely before cutting it. Otherwise, it will break it.
